Deborama’s Kitchen — Perfection is a Loser’s Game
Sometimes, it just makes sense to go back to the basics. Pictured above is my go-to meal when I don’t know what to eat. So yesterday, I stopped even pretending to be following a meal plan, and just made this.
Three small potatoes from the meal kit, about a half bunch of curly kale from a different meal in the same box, four eggs. Everything else is just flavoring — a red onion, a couple of garlic cloves, olive oil, salt.
Preheat the oven to 375F; shred the potatoes, mince the garlic and onion. Sauté the onion, add the shredded potatoes (i.e. hashbrowns) and cook till almost done. Wash the kale, strip out the stems, and thinly slice it. Add the garlic and kale to the skillet with a big spoon. Stir-fry it a bit. Turn off the heat and make indentations in the top of the dish for each egg you want to add. Crack the eggs into their little holes and pop the skillet into the oven for about 10 minutes.
I made a tad more than I could eat. I had about three-fourths of the amount shown in the picture.
