Deborama’s Kitchen — First Purple Carrot Meal

I am doing this out of order because I was so excited by this meal! I got my first Purple Carrot box two days ago, but only got around to cooking from it this evening. This dish was meant to go over regular spaghetti (which was included.) But I had a small spaghetti squash that had been waiting its turn to be dinner for over a month. Along with the fact that all meal kit meals are for two servings, whereas I am but one, so I have to do tweaks anyway unless it’s something you can stick in the fridge or freezer for later, I made the following changes:
- I prepped and cooked half of the Field Roast garlic and fennel Italian Sausage
- I didn’t even open the spaghetti
- Instead I split, cleaned out seeds, and baked my squash, then scooped out spaghetti strands from half of it.
- (After dinner, in cleaning up, I scooped out the other half and put it in a container for later.)
- I steamed the broccoli florets instead of throwing them in the spaghetti water for the last few minutes, because there warn’t no spaghetti. I also cut the broccoli florets up a lot because they were, like, bigger than my head.
