Deborama’s Kitchen — A Weird Experiment

I am doing weird experiments again, and again it involves ice cream. I have been loving on Izzy’s Brown Sugar Bourbon lately, mainly because it’s easily attainable via Pizza Luce delivery. One thing I don’t like about it — it’s too sweet. OK, two things. It’s also not coffee flavored.

I have been wishing someone made a sort of coffee syrup, but completely black and unsweetened. Deciding to make it myself, I ruminated a few days on ways to thicken something to a syrup consistency without sweetening it.

What I finally settled on was psyllium husks. A while ago, I bought a gallon size container of these beasts to mix with my morning orange juice or with lemonade during the day. For, you know, health reasons. I was not fond of the way, if I didn’t drink the drink really fast, it would thicken into a strange lumpy gel. So I just switched to the easier route of taking veg capsules of it.

Above is my experiment in progress. I used my cold leftover coffee from this morning (I almost never finish my coffee) and mixed in some psyllium and some organic vanilla extract. I let it sit around for about an hour and it was too thick. More a mousse than a syrup. So I dumped it all back into the coffee cup, which still had cold coffee in it, adding twice again the volume of coffee.
